Orgeat is essential in many cocktails. it’s profile brings out a sweet marzipan flavour and brightens it up with a floral orange blossom feature.
In basic terms orgeat is simply a sweetened almond nut milk. you can create it fully from scratch but will require some time and equipment, or there is a easy method using store bought items which will work just as good, but you will loose some control over the consistency and flavour.
Simple Method:
Store bought almond milk
Caster sugar
Orange blossom water
Use equal parts by weight, WARM almond milk and sugar. For every 150g of milk you will also need to add 2g of orange blossom water.
Blend or mix thoroughly in a bowl until the sugar has fully dissolved.
Bottle it up in a sealed jar/bottle.
From Scratch Method:
Almond nuts
Water
Caster sugar
Orange blossom water
Cheesecloth
Scales
Blender
Oven
Making orgeat from scratch is not as daunting as some might think.
Place almonds on a baking sheet and roast in an oven, should take about 10 minutes for them to brown but keep and eye on them as it’s not exact.
Weigh 50g of your roasted almonds, blend on high speed for 1 minute with 200g of warm water until it becomes a milk like consistency.
Strain through a cheesecloth, squeeze the cloth to get the remainder liquid.
Weigh the milk and add the same amount of sugar.
for every 150g of milk add 2g of orange blossom water.
blend again until the sugar has fully dissolved.
Pour into a sealed sterilised bottle.
