The Clover Club is a classic American cocktail that dates back to the late 19th century, originating at the Bellevue-Stratford Hotel in Philadelphia and named after the Clover Club, a gentlemen’s social group that met there. Traditionally made with gin, fresh lemon juice, raspberry syrup and egg white, it became particularly popular during the early 1900s for its elegant appearance and silky texture. Although its popularity declined during the mid-20th century, the Clover Club has experienced a modern revival alongside the renewed interest in classic cocktails.
Here’s how we did it:
Clover Club
50ml Gin, Sipsmith London Dry
20ml Raspberry syrup
20ml Fresh lemon juice
12.5ml Egg whites
Pour ingredients into a shaker, dry shake first to aerate the egg whites.
Add ice then wet shake until frosted. Double strain into a chilled coup.
Serve with raspberries to garnish
