The Aviation cocktail was created in the early 20th century and is generally credited to Hugo Ensslin, head bartender at the Hotel Wallick in New York. His original recipe appeared in his 1916 book Recipes for Mixed Drinks and combined gin, lemon juice, maraschino liqueur, and crème de violette, giving the drink its distinctive pale blue colour. The Aviation became less common when crème de violette disappeared from the market, but experienced a revival in the modern cocktail renaissance when the liqueur became available again.

50ml Gin, Aviation Gin
25ml Lemon Juice
25 simple Syrup 1:1 (optional)
12.5ml Mareshino Liqueur, Luxardo
25ml Crème de Violette
Cherry and lemon twist garish
Add all ingredients into your shaker.
Double strain into a chilled coup glass.
Garnish with a cherry and lemon twist.
